With a passion for creating unique dishes and a deep appreciation for community, Adam Baddeley is a chef who above all enjoys creating and sharing a good meal. From an early age, he expressed his love of great food and good company by creating new takes on the traditional dishes of his family background.
In 2004, he graduated from the esteemed culinary program at Humber College and went on to work his way up the kitchen ranks in many of the top restaurants in the greater Toronto area, including Pangea, the Delta Hotel and Conference Centre. In 2014, he became sous chef for the #1 Italian restaurant in Mississauga, Mondello Ristorante. He obtained his first Executive Chef role at a private golf and event centre outside of London in 2018. With over 20 years of industry experience, Adam has proven himself a champion chef among his peers winning the 2018 best food and beverage award for South Western Ontario.
Adam has been lucky to travel to many parts of the world and to experiment with ingredients and unique flavors that have expanded his pallet and inspire him to provide diners with an unforgettable culinary experience. Having been raised in Benevento, Italy near Naples, Chef Nicola Iatomasi found his culinary passion at a very early age. Today, he is inspired by the classic Mediterranean cuisine of his youth and driven to share the classic flavours of this region with family and friends.
Chef Nico completed his culinary schooling at Liaison College under the tutelage of French Master Chef Robert Orsi. He went on to share his passion at several famed restaurants, including The Mustard Grille,Il Antipasto and Stage West, where he proudly served as sous chef for 5 years. He spent several years as the Executive Chef for Il Pescatore, Ragazzi Ristorante and Michael’s Back Door, all A-list/Zagaat rated restaurants in the Toronto area.
In 2008, he opened his very own, Mondello Ristorante which was the #1 restaurant in Mississauga for 14 years, a unique dining establishment which exemplified Chef Nico’s ability to take traditional flavours to soaring new heights!
